BOURBON –In the US what defines bourbon is that it must be from a grain mixture that is at least 51% corn, aged in new, charred oak barrels, and distilled to no more than 160 proof or 80% abv. It must be barreled at no more than 125 proof.. Bottled at 80 proof or highter. has no minimum specified aging time, but it must be aged at least briefly.. however to be called a straight bourbon it must have met those, have at least 2 years of aging, and have no flavor additives. If it has less than 4 years of aging it must be labeled with the duration of its aging. Blended bourbons can labeled with an age, but must reflect the age of the youngest whiskey in the bottle (not to count any neutral spirit blended into the bottle because that is not considered whisky under the regs), and a blend may contain added coloring, flavoring, additional neutral spirits, but must be at least 51% straight bourbon.

Ryes In the United States, "rye whiskey" is, by law, made from a mash of at least 51 percent rye. (The other ingredients of the mash are usually corn and malted barley.) It is distilled to no more than 160 (U.S.) proof (80% abv), and aged in charred, new oak barrels.The whiskey must be put into such barrels at not more than 125 (U.S.) proof (62.5% abv).
